Wanda and I met her friend, Kristie at her house early this morning (7 a.m.) and headed to Sleek's Orchard in Bedford, PA to pick some strawberries... and pick some strawberries we did! We filled four trays. Whenever we got back home, Wanda and I looked at the strawberries and kind of chuckled. We were a little perplexed as to what to do with them all. So.. she got to work making some strawberry bread. (We also made some banana bread with some bananas that were about to spoil.) Then I found this recipe on Smitten Kitchen for making a Strawberry Summer Cake. We whipped together a no-bake cheesecake on which we will drizzle some strawberry coulis on top. We decided to freeze a batch, so that she can make smoothies or other goodies later. We are down to two trays, so I believe the plan is to eat them au natural and also make some Strawberry Freezer Jam.. which will be used as ice cream topping. It was indeed a berry nice day! I cannot wait to dig into that summer cake! Yum!
